Planting the Seeds...
After cooking professionally for 19+ years and gardening full time for the past 3 of those, it's time to marry everything together and create a place where the journey from seed to table can be measured in footsteps.
I will be opening a new restaurant in 2017 featuring a wood-burning oven and wood-fired pizzas with an emphasis on local food - specifically with as much grown in my gardens as possible. Name and location to be announced.
While many of the details have yet to be confirmed, there a few things that are set:
1. The pizzeria will be located in the city of St. Thomas, Ontario. Sit-down, full service.
2. Wood-fired Neopolitan-style pizza - thin crust, flavourful toppings baked in about 90 seconds.
3. Focus on growing as much food for the pizzeria from the gardens, located on another site. I will gladly support other local farmers (because they are producing great food, too!).
Update July 10, 2017
Knowing the brick and mortar restaurant will take time to build, I will be taking the wood-fired oven on the road to serve pizzas on site.
From late April until Mid-Oct, I will be baking pizza's every Friday night and Saturday at Railway City Brewery in St. Thomas.
