Sour Cream Doughnuts
What's better than a fresh baked old-fashioned doughnut dipped in maple syrup? An old-fashioned doughnut dipped in maple syrup and sprinkled with bacon lardons.
It's astonishing to read the Wikipaedia entry for doughnuts. Just like bread, many countries have their own unique version of deep-fried dough. Some have a hole in the centre and some are filled with cream or preserves. Maybe you prefer yours with a dusting of icing sugar or drenched in a super-saturated lemon & cinnamon syrup. Light and airy or dense and cakey. Koeksisters, beignets, and Berliners are just a few examples of some national variations.

There are two general types of doughnuts here in Canada. Yeast risen or cake doughnuts. The former are typically light, have a smooth texture and are often dipped in glaze and candy sprinkles. The latter are denser, richer, and have lots of nooks and crannies to capture the sweet glaze after dipping. For Day #7 of our 15 Days of Elgin Christmas, we've made a batch of old-fashioned sour cream doughnuts. Made in the cake-style, the dough batter is enriched with egg yolks, sour cream, and butter. Baking powder helps it puff during deep frying which creates the signature rough surface. After-frying, but while still warm, the doughnuts are dipped into a glaze made of real maple syrup which soaks into the doughnut but leaves a glossy, semi-firm coating. I like to take it one step further and sprinkle them with housemade bacon bits before the glaze dries.
Not sure about a maple-bacon doughnut? Think of it like breakfast- hot, fluffy pancakes with slices of bacon drizzled in maple syrup. This doughnut uses the same flavour combination, just in a different format.
